Pastrami Grilled Cheese
Hey everyone, last week Midamar was left without power from the Derecho that slammed the Midwest. But! We’ve got power now and we’re working to get everything back to 100% like it was a couple weeks ago, and part of that is the continuation of our Cooking with Cass series! I thought we’d come back with something I was craving while power was out: A Pastrami Grilled Cheese. A flavorful twist on my childhood favorite. In this recipe we caramelize onions and add some spicy brown mustard to give it that pastrami sandwich taste that I like so much. Plus, this week I thought I’d try using Jarlsburg cheese instead of swiss and was pleasantly surprised! It’s pretty similar in taste and melts nicely and acts like a glue that keeps the onions and pastrami from falling out as you enjoy this awesome sandwich. Also, I learned that pre-shredded cheese is harder to melt because it’s dusted in cornstarch to keep the cheese from sticking together, so make sure you shred your own cheese. Plus, it tastes way better when you shred it yourself.

Ingredients:
2 Tbsp olive oil
½ onion, thinly sliced
Salt and pepper to taste
1 tsp Worcestershire sauce (2-3 shakes)
1 Tbsp spicy brown mustard
Shredded Jarlsburg or Swiss cheese
4 slices of rye bread
Instructions:
1) Pour 2 Tbsp of olive oil into nonstick skillet, add onions and cook over medium high heat until lightly translucent.
2) Add salt, pepper, Worcestershire sauce, and spicy brown mustard and cook, stirring constantly, until soft and brown. Remove from skillet.
3) Don’t wipe out the skillet, place 2 slices of Midamar Pastrami round (or 4 if making 2 sandwiches) into skillet and cook until warm. Remove from skillet.
4) On a cutting board place two slices of buttered rye bread; buttered side down. Place cheese, onions, pastrami, more cheese, then top with the other piece of bread. Return sandwich to nonstick skillet and cook over medium heat until the cheese is melted and bread is browned
5) Enjoy!
