Gyro Pita Pizza

This week we take a Friday night classic and make turn it into a quick and easy lunch or dinner for any time of the week, plus we give it a little gyro twist which is just nice. The first critique I got from people around the office who gave these a try was, “I don’t like the kalamata olives,” which is a fair criticism. I, however, love kalamata olives by themselves and on gyros and personally thought they added a nice flavor to the pizza but, I mean. This is cooking, do what you like best! Also, while I was making this I thought that the tomato sauce may not work as well as if tzatziki for the main base, but I was pleasantly surprised by how well the tzatziki sauce worked with the tomato as a drizzle. It wasn’t overpowering but the flavor came through as slightly subtle hint which was, in my opinion, quite tasty. As always when I cook with cheese, I prefer to grate my own as it improves the flavor and melting factor. This is probably my favorite recipe I’ve made to date, so I hope you try it! P.S. I made way too much sauce in the video, so in this recipe I’m going to half that because it definitely should be enough to cover a whole bag of pita bread.

Ingredients:

Midamar Beef and Lamb Gyro Slices

1 bag of pita bread

½ large onion, thinly sliced

1 Tbsp butter

Tomatoes, Diced

Kalamata Olives, halved (optional)

Feta Cheese

Diced Cucumbers

Shredded Mozzarella

For the Pizza Sauce

16 oz tomato sauce

3 oz tomato paste

1/2 tbsp Basil

1/2 Tbsp Oregano

1/2 Tbsp Thyme

1/2 Tbsp Crushed Fennel Seed (optional)

For the Tzatziki Sauce

1 cup Plain Greek Yogurt

1 ½ Tbsp Lemon Juice

1 Tbsp Dill

1 Garlic Clove, grated

¼ cup of water 

Instructions:

1) In a mixing bowl combine yogurt, lemon juice, and dill; whisk to combine. Grate in garlic and whisk. Finally, whisk water in batches until desired consistency is reached.

2) Combine tomato sauce and tomato paste in non-stick skillet and cook over medium heat for 3 minutes. Add herbs and cook until slightly thickened. Remove from heat

3) Sauté onions in 1 tbsp of butter until caramelized, remove to a bowl and keep warm.  

4) Cut Midamar Gyro Slices in squares.

5) On a cutting board place pita bread, apply sauce, cheese, onions, tomatoes, olives (optional) gyro slices, and feta Cheese.

6) Bake at 425° for 8 – 10 minutes or until cheese is melted and crust is golden brown. Remove from oven.

7) Drizzle with tzatziki sauce and cucumbers.

8) Enjoy!
