Soda Pop Grilled Chicken and salad

We are into our second week of June and we want to make sure to let you know to place your orders to get your Halal favorites for Father’s Day! From steaks, to burgers, and hot dogs to ground beef, Midamar has whatever you need to make it a special Father’s Day. This year I plan on doing more grilling, so that’s where we’re starting today! The Soda Pop Grilled Chicken… and salad. I have to be honest here I really wasn’t expecting much from this. A couple people around the office said it was good and I thought it sounded easy enough, and my dad loves root beer, so it all fell into place. And I have to say, pretty pleased with this one. The spice mix played well with the flavor of the root beer, and the chicken gets a perfectly crisp exterior while keeping the inside nice and juicy.

Ingredients:

1 Whole Halal Chicken

½ cup Brown Sugar

¼ cup Paprika

¼ cup Smoked Paprika

3 Tbsp Black Pepper

3 Tbsp Fine Ground Sea Salt (use a food processor if necessary)

2 tsp Garlic Powder

2 tsp Celery Seeds

1 can of Root Beer, or preferred soda, half full with 3 holes made in the top and tab popped

Vegetable Oil

1 bag of Sno Pac Organic Green Peas

1 bag of Spring Mix Salad

¼ - ½ cup quartered Cherry Tomatoes

¼ cup Sharp Cheddar Cheese, shredded

5 Hard Boiled Eggs, cut into bite sized pieces

preferred salad dressing

Instructions:

1) Combine all brown sugar, paprikas, pepper, salt, celery seeds, and garlic powder. In a large mixing bowl, place whole chicken, pat dry with paper towels. Once dry, thoroughly coat chicken with seasoning mix being sure to gently season the underside of the skin as well as the inside of the chicken

2) Place the root beer can on a chicken roaster, place chicken around can and bend wings into neck hole

3) Heat grill to 400° and place chicken over indirect heat and brush with vegetable oil. Close grill lid and let cook for 45 minutes, adding oil every 15 minutes and rotating the chicken after 30 minutes. Use a meat thermometer under the wing of the chicken, once internal temperature registers 170° remove from grill and let rest for 10 -15 minutes

4) Remove chicken from roaster by pulling up, DO NOT TIP OVER!!! Any remaining pop will spill out and make a mess (I did this). Combine all remaining ingredients in a salad bowl and serve chicken with salad and your favorite dressing
