Shepherd's Pie with Broccoli

Shepherd’s Pie: is it pie? Is it casserole? It is not for me to say, but it is tasty. Very tasty! I’ve never made Shepard’s Pie before, but My family and I loved it. More big news, I have officially moved the studio from my apartment to the Midamar office! Saves me time and, more importantly, everyone else in the office gets to try what I cook. And everyone liked this dish, which pleased me greatly. The cheese in the mashed potato topping compliments the seasonings in the beef stew incredibly. 

I’ve got to come clean about one thing though… Technically speaking this isn’t Shepard’s Pie, it’s Cottage Pie. The only difference is that Shepard’s Pie uses Lamb instead of beef. Beef makes it a cottage pie. To make it a true shepherd’s pie all you need to do switch the beef out with some ground lamb, also available through our site. The final note I have is that all the veggies in this recipe come from Sno Pac, and it makes all the difference. The organic vegetables that they make are simply delicious, I don’t usually like sweet corn that much but it was so good in this I have to reconsider my entire outlook!


Ingredients:

For the Stew:

1 lb Midamar 80/20 Ground Beef

1 lb Midamar 93/7 Ground Beef

Sno Pac Organic Peas and carrots

Sno Pac Organic Sweet Corn

2 Tbsp Olive Oil

1 Small Yellow Onion

3 tsp dry Parsley

3 tsp Rosemary

3 tsp Thyme

½ tsp Salt

½ tsp Pepper

2 Tbsp Worcestershire Sauce

3 cloves of Garlic, minced

4 Tbsp Flour

3 Tbsp Tomato Paste

2 Cups of Beef Broth (unsalted preferred)

For the Mashed Potatoes:

3 lbs golden potatoes, boiled

½ Cup butter

¼ Cup of Chives, dried

Pinch of salt

½ tsp White Pepper

3-4 oz Aged White Cheddar

½ Cup of Milk

2 egg yolks

 

Instructions:

1) In a skillet add onions and olive oil, cook until translucent. Add ground beef, herbs, salt and pepper. Cook until meat is browned.

2) Add garlic and Worcestershire sauce, stir and cook for about a minute. Create a crater in the center of the skillet and place the tomato paste directly onto the pan. Cook for a moment and mix into beef. Add flour and stir to mix.

3) Add broth, Peas and Carrots, and Corn. Bring to a boil, reduce head and simmer for 15 minutes, stirring occasionally.

4) Set meat aside and preheat oven to 350°

5) In a large skillet cook 3 lbs of boiled potatoes for about 1 minute. Remove to a large mixing bowl and add cheese, butter, chives, salt, and pepper and mash using a masher. In a measuring cup, combine the milk and egg yolks and whisk. Pour into potatoes in batches and mash.

6) Pour Beef Stew into a glass casserole dish and flatten out, top with mash potatoes and flatten. Drag a fork across the top of the potatoes.

7) Bake for 30 minutes or until potatoes are golden brown.

8) Prepare Sno Pac Organic Broccoli Cuts according to package instructions and serve with shepherd’s Pie
