Lubiah
This week we’ve got a family comfort food: Lubiah. My mom would make this every fall and winter and it was always my favorite. And it recently occurred to me that even though I love cooking, I don’t actually know how to make a lot of the food from my childhood. So, considering this is the first time that this series has been around during the fall I thought, “This is a great time for Lubiah!” That and I was just kinda craving Lubiah. So, I rang up my mom and got her to share the family recipe for Lubiah. I’ve got to say, I’ve gotten a lot better at cooking over the last few years, but nothing tastes as good as when mom makes this dish, but I gave it my all! She told me I made it well and it tasted good, and that Sit’i would be impressed. I got the highest kudos available! And so will you if you follow this recipe!
Ingredients:
1 lb Midamar Halal Boneless Beef Stew Meat
1 Medium yellow onion, diced
2 10 oz bags of frozen green beans, steamed according to package instructions
2 Tbsp olive oil
2 – 3 Garlic Cloves
28 oz. Can of tomato sauce
½ Tsp salt
Instructions:
1) Brown onion and Beef Stew Meat in olive oil.
2) Pour in tomato sauce, garlic, salt, and stir until combined.
3) Add green beans, stir to combine.
4) Simmer Lubiah for 2 -3 hours or until beef is tender.
5) Serve with rice and Enjoy!
