Lamb Curry

This week I decided to try and develop my curry making skills and I had some extra lamb left over so I thought, “I don’t know what to do with this lamb. Is ground lamb curry a thing?” and much to my delight it is! I’m usually not a big fan of curry outside of the occasional butter chicken (which isn’t even curry so says some friends of mine) from a local Indian restaurant I like but this was pretty great. It has a good flavor which is accentuated by all the veggies in this. To tell you the truth I’m not usually a fan of lamb, but between the sweet potato, the spinach, and the seasonings that taste the I usually don’t care for was a pleasant undertone which expanded the depth of this dish. Plus, it’s so easy to make! It takes maybe thirty minutes or so, which really isn’t too bad, and most of that time is cooking the meat. Preparing the potatoes and onion is the only other thing that takes some time but it’s worth it.

All in all, my venture into curry making was a success and I’m excited to try making some other styles of curry in the future. Ingredients:

1 lb Ground lamb

1 tsp coconut oil

1 Medium onion, finely diced

2 tsps Curry powder

1 tsp Ground turmeric

¼ tsp Cayenne Pepper (or more if you like heat)

2 – 3 pinches salt

2 Sweet potatoes cubed

2 Cups of chicken broth

1 can of coconut milk

1 tsp apple cider vinegar

10 – 16 oz. of spinach or kale (I used spinach)

10 oz. frozen cauliflower rice

Cilantro optional

Instructions:

1) Cook Lamb, onions, and coconut oil until browned. Stir in spices, sweet potatoes, and chicken broth. Bring to a boil and reduce to a simmer for 8-10 minutes or until potatoes are soft.

2) Stir in coconut milk, apple cider vinegar, and cauliflower rice. Cook until cauliflower rice is separated and warm.

3) Stir in spinach and heat until leaves are wilted and soft.

4) Serve in a bowl and enjoy!

5) Remove from heat and enjoy!
