Blueberry Pie and Last Minute Cookout Recipes!
Blueberries were a favorite of mine when I was just a boy. My mother used to make blueberry muffins once and awhile and they were my absolute favorite, so I’m glad to evolve that love of blueberries and to the world of pies! Yes, they are a classic but, if I’m being totally honest, I’m not really a fan of pie. Or I thought I wasn’t…
Mostly because I had never made pie myself, only had it at diners and even then, it was only at diners that didn’t lard in the crust! Anyway, point is, I’ve never made a pie like this before, and I was thrilled when I gave it a taste. Oh, we’re also posting two recipes today! Burgers 3 Ways by Cooking with Cass | Midamar Halal --- Big Cass Burger
Ingredients:
5 packs of Sno Pac Blue Berries
2 ¼ cup flour
½ tsp salt
2 sticks of butter, frozen
Ice Water
1 ½ cup granulated sugar, plus more for sprinkling
¾ cup corn starch
Zest of 1 lemon
1 Egg white
Instructions:
1) Let Berries thaw in a sieve, and pat dry. In a large food processor combine flour and sugar, pulse a few times. To do this by hand, whisk in a large mixing bowl
2) With the shredding attachment, shred 2 sticks of butter, or 4 half sticks. To do this by hand, let 2 sticks of butter come to room temperature and cut into small cubes. Add butter to flour and mix by hand until butter is coated. 1 Tbsp at a time add ice water and mix until dough forms. Mold dough into a disc shape, wrap in plastic wrap and refrigerate for 30 minutes. Remove half of dough and roll out into a large sheet. Lay sheet of dough over Pie glass and lift, allowing the dough to fall into glass. Remove excess dough from the edge of the glass with a knife and add that to the remaining dough. Use remaining dough as a pie cover or to make a lattice for pie top, or use to make another pie.
3) Combine blueberries, sugar, cornstarch, lemon zest, and mix until berries are thoroughly coated. Pour berries into pie mold. Paint egg whites onto exposed pie dough, sprinkle with sugar and bake at 400° for 45 – 60 minutes or until crust is golden brown. If concerned about burning crust, remove and cover edges with aluminum foil. If filling won’t set, remove from pie with a large spoon to a large mixing bowl, add 1 tbsp of flour, mix well, add back to pie crust and back until filling is set.
4) Serve pie with Ice Cream after a grill out with Midamar’s delicious Hot Dog’s and Hamburgers!
